I don’t know about you, but the past few months have been super super busy for me.

That’s a really good thing, actually, as I’m working on some very exciting eCourses and other goodies that will be coming out by the beginning of 2015.  Yea!

I absolutely love helping people get back to basics, eat clean and cleanse their bodies with delicious real food so much that sometimes I push myself a little too far when I’m working until my stomach begins to give me some pretty loud signals that it’s time to give my body some much-needed fuel.

Having high-quality snacks on hand really helps keep me on track when this happens and I’m hoping you’ll adopt my little tip, too.

The bottom line is, when you’re hungry, if you have healthy and delicious food on hand, you’ll eat healthy and delicious food.  It’s as simple as that.

My Superfood Granola Snack is very easy to make and is packed with nutrition, so that gives you a lot of bang for your buck so to speak.

You can serve your Superfood Granola Snack on its own, stirred into some coconut or full-fat Greek yogurt or eat it like a cereal, topped with some almond or coconut milk and even fresh fruit.

However you eat it, enjoy!

Superfood Granola Snack

4 cups old-fashioned oats

½ cup pumpkin seeds

½ cup sunflower seeds

½ cup almonds

½ cup coconut flakes

½ teaspoon Celtic sea or Himalayan pink salt

1 teaspoon cinnamon

¼ cup coconut  oil

½ to ¾ cup raw local honey

1 to 2 teaspoons vanilla extract

½ cup dried goji berries

*USE ORGANIC, LOCAL AND/OR WILD-CRAFTED INGREDIENTS, WHEN AVAILABLE*

To Prepare:

  1. In a large bowl, thoroughly mix together oats, pumpkin/sunflower seeds, almonds, coconut flakes, sea salt and cinnamon and set aside.
  2. Make sure that the coconut oil is liquified by running the jar under hot water.
  3. In a separate bowl, mix together the coconut oil, honey and vanilla extract.
  4. Pour liquid mixture over oat mixture.
  5. Next, spread  the mixturein an 10 x 15 pan.
  6. Bake at 300°F for 40 minutes, stirring every 10 minutes.
  7. When your Superfood Granola Snack is cool, stir in dried goji berries.

You can store your granola in an air-tight container in the fridge for up to a month (if it lasts that long!) and in the freezer for several months.

Please Note:  If you are allergic or have a food sensitivity to any of the ingredients, feel fee to substitute with ingredients that you are not sensitive to.  If you are on a gluten-free diet, be sure to purchase gluten-free old-fashioned oats.
