It’s a beautiful day outside and I’ve spent the morning inside on my computer, putting some finishing touches on a fun event that I”m hosting on Facebook that begins September 8th.  It’s my 21-Day Delicious Smoothie Challenge, and I am so darn excited to sip some simple and delicious smoothies for 21 days in a row with some amazing people, both smoothie beginners and smoothie connoisseurs alike!

Well, after losing track of time in cyberspace, my belly began to growl, reminding me that it’s time to take a break and eat some yummy food. While thinking about what I’d make for breakfast, I got a wicked craving for a smoothie I haven’t made in a while…  My Peppermint Delight Smoothie.  It’s light, refreshing and always gives me a boost of energy!

I love green smoothies, although sometimes I like to take a break from my chlorophyll-colored creations and sip on something not so green.  By all means though, if you want to throw in a handful of spinach to add some green to your Peppermint Delight Smoothie, feel free.  Make it your own and enjoy the heck out of it.  :0)

So when you make the Peppermint Delight Smoothie, I would recommend starting with 1/2 teaspoon of the peppermint extract and then taste-testing your smoothie to see if it’s got that perfect-mint taste that suits your palate .  If it’s not minty enough for you yet, simply add more extract, 1/4 teaspoon at a time, until it tastes fabulous to you.

If you happen to have some fresh peppermint on hand, you can omit the extract and throw in a handful of fresh mint leaves as a substitution.  And if you don’t like peppermint, yet you love wintergreen or spearmint, go right ahead and use one of those.

If you want a thinner smoothie, feel free to add in more “milk” or “water” to your recipe.  As is, it makes a pretty thick smoothie.

My smoothie was sweet enough for me so I didn’t add in any optional sweeener.  You know what I’m going to say, though… If you taste yours and want added sweetness, add in the sweetener of your choice and enjoy. xo

Ingredients
:

1 cup unsweetened almond or coconut milk
1/2 cup coconut water or spring/filtered water
1 ripe banana
1/2 avocado, peeled and pitted
1 Tablespoon chia seeds
1 Tablespoon cacao nibs
1/2 to 1 teaspoon of peppermint extract
Raw local honey or green stevia, to taste (optional)
Ice (Optional)

Directions:

Process all ingredients in blender until smooth.  Garnish with cacao nibs and/or a few mint leaves.  Enjoy!
