Chocolate Chia Pudding with Fresh Fruit Topping

Even though my mom was constantly telling me to “Go to bed,” I would sneak and watch late-night TV as much as was humanly possible.

One of my favorite commercials that seemed to pop up on my television at around 1 am on the nights I was able to slide under my mom’s radar was the infamous Chia Pet commercial.

If you’ve seen it, I’m sure you can still can hear that jingle in your head, “Cha-Cha-Cha Chia.”

Even though I watched these commercials hundreds of times, I never got to have my own chia pet.

Sad, I know.

Never fear though, chia seeds came into my life in full force when I was attending Tony Robbins’ Life Mastery event for the first time back in 2000.

At first it seemed weird to me to even think of eating these little seeds.

I moaned and groaned and made fun of the Chia Pet commercial that I grew up with, and then I tasted them in the form of a chia seed bar that was handed out at the event.  That’s the moment I was hooked.

They could be used for so much family fun and are little powerhouses of health that pack a big nutritional punch at the same time.

Chia seeds are a superfood that are rich in omega-3 fatty acids and are filled with fiber, calcium, phosphorus, magnesium, manganese, copper, iron, molybdenum, niacin and zinc.

Sounds pretty sweet, right?

One thing that is GREAT about chia seeds is the fact that they keep you feeling full for a nice long while after you eat them and that helps when it comes to keeping your weight in check.

If you’ve made any of my clean eating or cleansing recipes that are contained in my Back to Basics Cleanses or one of my delicious recipe books, you’ve most likely tasted one of my chia seed recipes before.

Today I’m excited to share with you a brand new recipe… My recipe for Chocolate Chia Pudding with Fresh Fruit Topping.

Chocolate Chia Pudding with Fresh Fruit Topping

Chocolate Chia Seed Pudding with Fresh Fruit Topping, chocolate chia seed pudding, chia seed pudding, easy chia seed pudding recipe, simple chia seed pudding recipe, chia seed pudding, chia seed pudding recipe, laurie driggers, inspired health and happinessMakes 1 to 2 servings

Ingredients:

1 cup unsweetened almond milk
3 tablespoons chia seeds
1 tablespoon raw cacao powder
1 to 2 teaspoons coconut nectar (depending on desired sweetness)
1 teaspoon vanilla extract
Dash of cinnamon
Pinch of Celtic sea or Himalayan pink salt
1/2 cup fresh fruit of your choice*
1/4 cup coconut flakes (optional)

*When choosing fresh fruit for your topping, I have some suggestions for you to use based upon the seasons of the year.

  • In the fall or winter, cut up some green apple, pear or use pomegranate seeds to top your pudding.
  • In the spring or summer, use any berries of your choice, pitted cherries, banana, peaches, nectarines, mangoes or papaya.
To Prepare:
  1. To prepare your Chocolate Chia Pudding with Fresh Fruit Topping, add your almond milk, chia seeds, raw cacao powder, coconut nectar, vanilla extract, cinnamon and salt to a glass bowl.
  2. Stir and thoroughly combine all the ingredients together.
  3. Place in the refrigerator to set.
  4. After 5 minutes, stir your pudding, as the chia will begin gelling into a pudding-like consistency.
  5. Let it sit in the refrigerator about 20 minutes or until ready to eat.
  6. Top with the fresh fruit of your choice and optional coconut flakes.
  7. Enjoy your healthy and delicious meal!

**Please Note:  If you find that your Chocolate Chia Pudding with Fresh Fruit Topping is too thick, simply add in more almond milk or a little clean water. If your pudding seems too thin, add more chia seeds or any of the other ingredients to make it thicker.
